Hmm…SiennyLovesDrawing actually wishes to retire early, yes ✅, since she has graduated & starting to work 👩🏻‍💻, this is a life goal 🎯 that she is working on. It means good financial habits count, be discipline in your budget set, not wasting money unnecessarily etc. Some of her tips are reduce eating out, no unnecessarily phone upgrades, unnecessarily clothing & apparel shopping, not to opt for extended warranties & not to fall into emotional impulse shopping etc.

Apart from the major concern ie. Enough financial to support early retirement, the rule of thumb widely recognised is only withdraw 4% from retirement savings each year

Personally to her, enough meant differently by each retirees, if you can be living on a lower budget that you’re comfortably adapting to, without any luxury elements, then your “enough” for early retirement surely more achievable, as compared to those that wish to enjoy a more luxury comfortable retirement life. So, a honest & reality self reflect is required to consider your retirement lifestyle, current or long term healthcare needs, living downsizing etc. ya 💪🏻🙌🏻👍🏻

The important factor that drives her to achieving early retirement is what she is gonna do to fill her time after retire. Once retired, it means literally you have extra hours of 9 to 5 on your own, no need answering to many bosses, hurray‼️ She knows herself well that she needs to keep her time occupied, she just can’t be doing nothing for a long time, she just can’t, lol 😆

Frankly, initially when she wishes to retire early, so she can backpacking around the world 🎒🌎, however with the global health pandemic now, she needs to pen down what she is gonna do instead before her long backpacking journey then

Stay-At-Home Valentine’s Day Meals Planning

Beverage – Blue Pea Sour Plum Drink 🍹

  • Brew blue pea tea 1️⃣st
  • Then, add a tea spoon of sour plum sauce or more according to own tasting preference
  • Can add honey 🍯 & preserved mandarin peel for greater tasting enjoyment 🍹
  • Keep in fridge & then enjoy every refreshing sips

Appetizer ~ Healthy Salad 🥗 🥗

  • Wash & clean veggie bundle, salmon cubes, shrimps etc.
  • Prepare the veggie into smaller bite sizes
  • Boil in clear water to cook the salmon cubes & shrimps
  • Add all in a salad 🥗 bowl
  • Mix well or pour direct the sesame oil, roasted sesame salad dressing & sour plum sauce to the salad 🥗 bowl
  • Topping with Wolfberry 枸杞 ❤️, raisins, nuts, pumpkin seeds, roasted seaweed flakes & chicken floss etc.
  • Enjoy 😋👍🏻

Main dish ~ Baked Cheesy Seafood Platter

  • Wash & clean the scallops with shells, salmon cubes & ready to eat shrimps
  • Mix well the sesame oil & pinch of salt 🧂 to marinate
  • Marinate the ready to eat shrimp with sweet soya sauce
  • Preheat toaster oven 150 degree Celsius for 5mins
  • Baked the marinated salmon cubes & scallops seafood platter in the toaster oven 175 degree Celsius for 10mins
  • Top with marinated ready to eat shrimps & Mozzarella cheese to bake again for another 4mins

Optional: Sprinkle some roasted seaweed flakes & a drop or two the sour plum sauce on top the seafood

Dessert ~ Chocolate Puffs

  • Defrost the puff pastry

Note: Don’t over defrost as the dough will be too soft & sticky to work on, her 1st baking not in good love 💗 shape

  • Spread well the chocolate hazelnut onto the sheet of puff pastry dough

Note: Don’t spread too thick as when bake in oven, the chocolate will over flow & affecting shaping ☺️

  • Fold both ends of the dough towards the center
  • Put in the freezer until the dough becomes hard & easy to cut
  • Cut the dough into approximately 1/4 inch wide slices
  • Arrange the slices on a baking tray
  • Pinch the bottom of each slices to make each looks like a heart shape 🤎 Not to worry to exaggerate the heart shape as the pastry will swell in the toaster oven
  • Bake 180 degree Celsius in the toaster oven for 10 mins
  • Enjoy 😋👍🏻

When you’re downie, eat a brownie 🟤

It’s because personally she really love this nutty chewy texture baked with whole wheat flour & red sugar. Yes ✅, this slight nuttiness really imparts a deeper flavor than traditional brownies, yum max 😋

Before this, she has read online 👩🏻‍💻 that it’s not encourage to bake brownies with whole wheat flour. It’s ideal to mix half portion with all purpose flour instead

However, she didn’t & still insist to try experiment her brownies baking with ONLY whole wheat flour. She has succeeded even the 1st experiment baked, yeah‼️ So happy 😁💪🏻

Not just that, she is also using red sugar to ensure the chewy texture of the brownies

What are the ingredients ❓⁉️

Simple easy brownies baking with just 6 ingredients below,

  • 1/4 cup red sugar (From Nutri Pure Trading)

Baking tips 📌: The usage of red sugar will speed up gluten formation & resulting in a chewier texture

  • 1/4 cup cooking oil
  • 1 whole egg 🥚
  • 1/2 cup whole wheat flour (From Nutri Pure Trading)
  • 1/2 cup + 1/4 cup chocolate milk powder (Dugro)
  • 1/4 teaspoon salt 🧂

How to ❓⁉️

The baking step by step,

1st, mix well with electric mixer for 1/4 cup red sugar (From Nutri Pure Trading, it’s imported from Thailand), 1/4 cup cooking oil & 1 whole egg. Until the mixture without lumps
