As you all know, the ‘cha chaan teng’ 茶餐厅 is a Hong Kong 🇭🇰 concept tea restaurants that brings together both Chinese & Western food. Also as the name alludes, these tea restaurants serve tea 🫖🍵☕️ , most notably the strong, tannic, brewed tea strained through a tea sock, then laced with evaporated milk 🥛丝袜奶茶 This tea, traditionally drunk hot, accompanies little bites of Chinese pastries such as the famous egg tarts 蛋挞 & Bo Lo Buns 菠萝包 These little meals allow busy Hong Kongers a respite from the city bustle & cha chaan tengs have expanded to serve full meals of both Chinese & Western food, with some interesting fusion crossings

He 👨🏻‍🍳 elaborated that after CNY, every month there will be some limited edition food items & are exclusively on sale only for that particular month. Yes ✅, monthly special & will align to festivals that happens that month. Wow 🤩 She just can’t wait to try & enjoy the rice dumplings here during June 2024 in conjunction to The Dragon Boat Festival as Chef David informed that he may explore to create 🆕 taste by marrying Nyonya dumplings style with traditional Chinese dumplings

Its menu showcases both Nanyang & Cantonese cuisines, hence offering local favourites, dim sum 🥟 , expertly roasted items, premium teas 🫖🍵☕️ , small bites & more. It carries Chef David’s 👨🏻‍🍳 crafted menu & Cantonese Opera narrative to the dining scene to create an authentic dining experience & entice all taste buds

Chef David 👨🏻‍🍳 also explained that his menu with healthy & nutritional 👍🏻 food items, for example he uses both baked & fried methods so that foods will be less oily, ❌ MSG, ❌ artificial sweetener, ❌ artificial colouring, ❌ artificial flavours

He proudly informed that all its pastry items remain crunchy even being eaten only many hours after or even overnight till the next day, wow 😲It’s true, personally SiennyLovesDrawing really love the crisp & crunchy outer part of the curry puff served here 👩🏻😋💯

Small bites & snacks include bo lo buns 菠萝包 (Aka ‘pineapple 🍍 buns’ for the pattern of the butter & sugar crust on top of the buns), with an assortment of accompaniments including butter 🧈 , truffle & scrambled eggs. There are also a variety of baguettes 🥖 & toast 🍞 for those wanting a smaller meal

All diners can choose from an array of expertly roasted items ~ Duck 🦆 , chicken 🐓 , pork belly & “Char Siu” served with rice 🍚 for heartier meals, or opt for a delectable selection of rice-based meals including nasi lemak, nasi sambal udang, kampung-style fried rice & the cha chaan teng staple of baked marinated pork chop rice with tomato 🍅 concasse & cheese 🧀 

Also available is a range of local noodle favourites ranging from Penang char kuey teow, wanton noodles, curry laksa 🍜, fish head meehoon & beef tendon noodles. For additional warmth in the cool mountain air, there is also a selection of soup & congee 🥣 . The latter also features in the supper menu served from 10.30pm to 5.30am. Teochew pork rib pepper soup, yong tau foo kway teow soup & Singapore fried meehoon are also available for supper, wow 😲

Heat oil in a pan, add chopped onion, minced garlic & if you like it spicy, add some finely sliced green chilies into the pan. Sauté until fragrant. Stir in a pack of Ayam Brand™ Chopped Tomatoes 🍅 & some chili paste, cook a while on low heat. Add in the contents of 1️⃣ can of Ayam Brand™ Sardines 🐟 in Tomato 🍅 Sauce & 1️⃣ can of Ayam Brand™ Baked Beans 🟠 Allow to heat through, stirring occasionally until well combined. Add salt🧂 & pepper to taste

  • 1 tsp salt
  • 1 tbsp oil
  • 2 tbsp chopped onion
  • 1 tbsp minced garlic
  • 1 tbsp chopped big green chillies
  • 1 tbsp chili paste
  • 1 can Ayam Brand™ Sardine 300g 🐟
  • 1 pack Ayam Brand™ Chopped Tomatoes 🍅
  • 1 can Ayam Brand™ Baked Beans 320g 🟠

Method:

  1. Heat the oil in a pan, add chopped onion, minced garlic & few green chili in a pan. Stir until fragrant
  2. Stir in the Ayam Brand™ Chopped Tomatoes 🍅 & chilli paste, cook a while in a low heat until oil splits
  3. Pour in Ayam Brand™ Sardine 🐟 & Ayam Brand™ Baked Beans 🟠 Give a stir occasionally until well combined
  4. Before turning off the heat, you can add salt 🧂for the taste. This dish goes well with lempeng & the leftovers could be reheat to consume for dinner

Mini Jacket Potatoes with Baked Beans (Suitable for Vegetarians)

Let’s make your own jacket potatoes 🥔🥔 at home 🏡 as it’s easy to prepare, although they do take some time to bake

Heat your oven to 180°C. Wash 200g of baby potatoes (regular potatoes 🥔🥔 will work, remember to give them a good scrub & more time in the oven). Pat dry & prick all over with a fork. Coat with olive oil & toss with salt. Arrange the potatoes on a baking sheet in a single layer & bake for 40 mins. Cool for 10 mins. Cut a tiny cross into the top of each potato 🥔, then lightly pinch the base to create an opening

Top each potato  🥔 with a teaspoon of Ayam Brand™ Baked Beans 🟠, a dash of chili flakes & a sprinkling of chopped spring onion. To add tanginess, finish with a squeeze of lemon 🍋 juice. Serve immediately

Ingredients:

  • 200g baby potatoes
  • 1 tsp salt
  • 1  tsp chili flakes
  • 1  tbsp olive oil
  • 2  tbsp lemon juice
  • 1  can Ayam Brand™ Baked Beans 425g 🟠

Method:

  1. Heat oven to 180°C. Prick the baby potatoes with a fork, coat with the olive oil, then toss with salt 🧂
  2. Arrange the baby potatoes on a baking sheet & place in the oven for approximately 40 mins. Then, allow the baby potatoes to cool for 10 mins
  3. Cut a tiny cross into the top of each & slightly pinch the bases to open a little. Now, top with a teaspoon of Ayam Brand™ Baked Beans 🟠 to each, a little chili flakes & a sprinkling of spring onions

Spaghetti 🍝 with Baked Beans Sauce (Suitable for Vegetarians)

Here’s an easy dinner or lunch pasta meal using baked beans instead of ready-made pasta sauce

Heat some oil in a pan. Add minced garlic & onion, fry until fragrant. Add half a can of Ayam Brand™ Tomato Puree 🍅 & ground pepper, stirring for 2 mins. Next add 2 cans of Ayam Brand™ Baked Beans 🟠, heat through & stir until well combined. Use an immersion blender to blend into a paste.   • 1 liter  water

Method:

  1. Add spaghetti  to a pot of well salted boiling water. Once you have reached  al dente, drain off the water & set aside
  2. Now, heat oil in a pan over medium heat. Add minced onion & garlic, stir occasionally for 5 mins
  3. Pour half can Ayam Brand™ Tomato Puree 🍅, ground pepper & a whole can of Ayam Brand™ Baked Beans 🟠 which blend into paste
  4. You can add the cooked spaghetti with half a cup of the salted pasta water. Stir until well combined & let it simmer for another 5 mins until the spaghetti  is softened

This dish takes it inspiration from South Indian vadai & Middle Eastern falafel. Turn it into a sandwich or wrap, akin to a falafel sandwich, serve as a side dish to any main meal or have it as a snack

Stir-fry finely chopped carrots, green chilies & Ayam Brand™ Whole Kernel Corn 🌽 with salt until softened. In a big bowl, add in softened carrots, corn, green chilies & drained Ayam Brand™ Baked Beans Light which has 48% less sugar. Then, mash all the ingredients together completely. Add some corn flour to this mixture to create a workable dough. Add some finely minced ginger, onion & coriander leaves to the mixture & mix well using your fingers. Season with salt & chili powder to taste

Shape into medium-sized patties. Coat patties in breadcrumbs & arrange on a plate. Heat oil in a shallow frying pan. Fry on 1 side until crispy, then flip & crisp up the other side. Fry in batches & do not overcrowd the pan

  • 2 cans Ayam Brand™ Baked Beans Light 425g

Method:

Hmm…. Though there are a variety of mooncakes 🥮🥮 that can be found in online stores, supermarkets & elsewhere. As everyone knows that festive foods can easily lead to weight gain ie. The sweet & glutinous mooncakes are also well-known as calorie bombs for their high ⬆️ oil & sugar contents

If you want to eat well without putting on a lot of weight, try using the air fryer which has been focusing on oil-free & healthy cooking & baking. With just a few simple steps & an air fryer, you can easily bake delicious & healthier Mid-Autumn Mooncakes 🥮🥮

Sesame Mooncake ⚪🥮 

Dough:
✅ Freshly ground black sesame powder 20g
✅ Cake flour 190g
✅ Unsalted butter 100g
✅ Egg wash 15g
✅ Icing sugar 45g
✅ Whipping cream 20g
✅ Coconut milk 10g

Black Sesame Filling:
✅ Black sesame mooncake filling 216g
✅ Freshly ground black sesame powder 24g

Directions for Mooncake Filling:

  1. Wrap a suitable amount of black sesame seeds in tin foil. Put into the air fryer & bake at 160°C for 5️⃣mins. Cool the seeds completely before grinding them into powder with a food processor
  2. Mix the black sesame ingredients. Divide the mixture into 20g pieces. Roll the pieces into balls ⚪⚪ & refrigerate

Directions for Pastry:

  1. Mix & sieve the cake flour & sesame powder
  2. Leave the butter 🧈 at room temperature until soft. Add the icing sugar & sieve
  3. Stir in the egg wash, whipping cream & coconut milk
  4. Add the sifted cake flour & sesame powder. Knead the mixture
  5. Knead well. Wrap in cling film & refrigerate for at least 1️⃣ hour

Directions for Mooncake 🥮:

  1. Take the pastry dough out of the refrigerator. Divide it into portions weighing 28g each & knead into a ball ⚪
  2. Place the dough under cling film. Then, flatten it into a circle with a hand or rolling pin. The dough pieces should be thinner along the rim
  3. Wrap 1️⃣ piece of sesame filling in the dough
  4. Sprinkle flour on the mooncake 🥮 & mould. Knead into a cylinder & place it in the mould. Press lightly with your hand
  5. Turn the mould upside down. Press 🔟 times & remove the mooncake 🥮
  6. Refrigerate the pressed mooncakes 🥮🥮 for 1️⃣ hour
  7. Preheat the Air fryer at 200°C for 🔟mins. Spray water on the mooncakes 🥮🥮 before placing them on the baking tray. Bake at 200°C for 4️⃣mins & then bake at 180°C for 2️⃣mins
  8. Remove the baking tray along with the mooncakes. Brush on syrup & bake for 1️⃣min

Assorted Nuts Mooncake 🟤🥮

Dough:

✅ Egg 1 piece 🥚
✅ Sugar 50g
✅ Unsalted butter 🧈 150g
✅ Baking powder 1/2 tsp
✅ Plain flour 300g
✅ Custard powder 30g
✅ Evaporated milk 40g
✅ Olive oil 10g
✅ Egg wash 1piece

Red Bean Filling:
✅ Macadamia nuts 30g
✅ Pine nuts 10g
✅ Red bean paste 50g

Lotus Paste Filling:
✅ American walnuts 30g
✅ Lotus seed paste 50g

Directions for Mooncake Filling:

  1. Combine the walnuts & lotus seed paste, form small balls 🟤🟤 as stuffing
  2. Combine the macadamia nuts, pine nuts & red bean paste, form small balls 🔴🔴 as another stuffing

Directions for Pastry:

  1. Mix the egg, sugar, butter & baking powder. Add plain flour & cuspowder, mix well & knead into a dough. Then add evaporated milk & olive oil, mix well knead to form the crust

Directions for Mooncake 🥮:

  1. Divide the dough into small portions about 40g each & roll each portion flat
  2. Wrap a lotus seed stuffing or red bean stuffing in each dough. Put into a mooncake mould plunger, press hard to release the mooncake 🥮
  3. Put into the air fryer & bake at 160˚C for 🔟mins. Take out & brush with the egg wash. Return to the air fryer & bake at 150˚C for 5️⃣mins. Again, take out & brush with the egg wash. Return to the air fryer & bake at 190˚C for another 2️⃣mins. Served cold

Purple Potato Mooncake 🟣🥮

Dough:
✅ Purple potato powder (baking) 25g
✅ Cake flour 190g
✅ Unsalted butter 🧈 100g
✅ Icing sugar 45g
✅ Egg wash 15g
✅ Whipping cream 10g
✅ Coconut milk 10g

Purple Potato Filling:
✅ Purple potatoes (peeled) 240g
✅ Butter 🧈 10g
✅ Granulated sugar 30g
✅ Whipping cream 10g

Directions for Mooncake Filling:

  1. Cook the purple potatoes 🍠🍠 Peel & mash with a fork. Add the sugar, butter 🧈 & whipping cream. (If the mixture is too watery, thicken it with a small amount of starch.)
  2. Divide the purple potato filling into 20g pieces. Roll the pieces into balls 🟣🟣 & refrigerate

Directions for Pastry:

  1. Put the icing sugar & butter 🧈 into a big bowl 🥣 Whisk well
  2. Stir in the egg wash, whipping cream & coconut milk
  3. Sieve the cake flour & purple potato powder into the mixture. Knead well. Wrap in cling film and refrigerate for at least 1️⃣ hour

Directions for Mooncake 🥮:

  1. Take the pastry dough out of the refrigerator. Divide it into portions weighing 28g each & knead into a ball 🟣
  2. Place the dough under cling film. Then, flatten it into a circle with hand or rolling pin. The dough pieces should be thinner along the rim
  3. Wrap 1️⃣ piece of purple potato filling in the dough
  4. Sprinkle flour on the mooncake 🥮 & mould. Knead into a cylinder & place it in the mould. Press lightly with your hand
  5. Turn the mould upside down. Press 🔟 times & remove the mooncake 🥮
  6. Refrigerate the pressed mooncakes 🥮🥮 for 1️⃣ hour
  7. Preheat the air fryer at 200°C for 🔟 mins. Spray water on the mooncakes 🥮🥮 before placing them on the baking tray. Bake at 200°C for 4️⃣mins & then bake at 180°C for 2️⃣mins
  8. Remove the baking tray along with the mooncakes 🥮🥮 Brush on syrup and bake for 1️⃣ min

Matcha Red Bean Mooncake 🟢🥮

Dough
✅ Low-gluten flour 180g
✅ Coconut milk 10g
✅ Matcha powder 10g
✅ Unsalted butter 🧈 100g
✅ Whipping cream 20g
✅ Egg🥚15g
✅ Icing sugar 45g

Red Bean Stuffing
✅ Red bean paste 240g

Directions for Mooncake Filling:

  1. Divide the red bean paste into portions of 20g & gently roll each into a ball 🔴 using both palms
  2. Keep the filling in the refrigerator for later use

Directions for Pastry:

  1. Whisk together the icing sugar, softened butter, egg, whipping cream & coconut milk until well blended
  2. Add the sifted low-gluten flour & matcha 🍵 powder & knead the mixture into a dough
  3. Wrap with plastic wrap & refrigerate for more than 1️⃣ hour

Directions for Mooncake 🥮🥮:

  1. Divide the pastry dough into portions of 28g each. Roll each into a small ball & flatten each out with your palm. Place a portion of red bean filling on a flattened dough. Wrap the dough around the red bean. Seal the dough & softly roll it into a ball 🔴
  2. Put a mooncake into the stamp mould (lightly greased inside with vegetable oil for easier release), one at a time
  3. Cover with plastic wrap & freeze for more than 1️⃣ hour
  4. Put mooncakes in the air fryer basket. Switch on & set the device at the indicated time & temperature: 160 degrees, 9️⃣ mins
  5. Open the air fryer & spread some syrup* on the surface of each mooncake
  6. Continue to bake for 1️⃣ min
  7. Place the mooncakes on a plate & serve
